Thai Chicken Lettuce Wraps

Today I have a fun and yummy post

I’m showing you how to make Thai chicken lettuces wraps.

One of my best friends Ashley (seen above) and I love getting together as often as we can to cook. We love making something homemade and delicious.

One of our current favorites is Thai lettuce wraps which we made together the other week. I took pictures, of course, and thought this would be a fun recipe to share on the blog

We adapted our recipe from Tastes Better from Scratch.

Here’s the ingredients:
1 Tbsp canola oil
2 cooked chicken breasts, chopped into small cubes or shredded
3 cloves garlic, minced
1/2 sweet onion, chopped
1-3 carrots, chopped
1/2 cup purple (red) cabbage, chopped
3 green onions, thinly sliced
Salt and pepper to taste
Bib or Romaine Lettuce Leaves

For the sauce
1/3 cup sweet chili sauce
1 heaping Tbsp crunchy peanut butter
1/4 tsp freshly chopped ginger
2 tsp soy sauce
Crushed red pepper, to taste

Directions

1. Chop cabbage, carrots, onions and garlic
2. Mix all ingredients for sauce together in a small bowl or measuring cup (really you can make the sauce how you like it and taste it as you are mixing. Ashley always makes a little more sauce than needed so everything has a good coating)
2. Heat oil in large skillet, add chicken, cabbage, carrots, onions and garlic
3. Cook about 10 minutes until vegetables are tender
4. Add sauce and simmer until vegetables are well coated and sauce is warm.
5. Top with green onions before serving
6. Serve in lettuce leaves
7. Enjoy!

We never exactly measure our veggies. We usually eyeball it to what we think looks good. However, if you use a lot of veggies, you may want to make more sauce. As you can see, we used a lot of veggies.

In addition to our lettuce wraps, we also made coconut rice! Ashley has a rice cooker so she added a a tablespoon of coconut oil to the rice while it was cooking. It was surprisingly tasty. The rice added another savory flavor to the wraps!
To eat the wraps, you can enjoy them taco style, burrito style or no wrap style! The veggie-chicken mix is delicious on its own.

These wraps are very similar to the P.F. Chang’s Chicken Lettuce Wraps, but I think they are even better and cheaper!

This dish is so easy to make, too. The hardest part is just chopping the vegetables. We used precooked chicken so it was ready in no time. If you don’t have precooked chicken, you can cook the chicken, onions, garlic, salt and pepper first and then add your veggies.

One of my favorite things about this dish is it’s packed full of flavor and protein! You feel full and satisfied after eating the wraps and guilt free since you just ate so many great veggies.
